Smoked Herring Pate

Makes 1 1/2 cups


  • 125g Australian butter
  • 1 x 125g can smoked herring
  • 1 apple, peeled, cored and coarsely grated
  • 1/2 cup smoked almonds, chopped
  • 2 tablespoons chopped parsley
  • black pepper to taste

  1. Beat butter until soft and creamy. Add remaining ingredients and blend together thoroughly. Spoon into a small serving bowl. Garnish with a sprig of parsley. Serve as a spread with fingers of toast, rye bread or crackers or as a dip with celery and cucumber sticks.
