Slimmer's Omelette

Serves 1


  • 2 eggs, separated
  • 1/4 cup Australian natural yogurt
  • 1 tablespoon chopped fresh parsley
  • 5g Australian butter

  1. Gently whisk egg yolks, yogurt and parsley together until well combined. Beat the egg whites until stiff peaks form. Fold in the yogurt mixture. Melt butter in a small non-stick frypan and pour in egg mixture. Cook over a medium heat until underside is golden. Place pan under a hot grill and cook until the surface is set and browned. Loosen edges of omelette from the pan before sliding onto a plate.
