Serves 4


  • 250g cultivated mushrooms, thinly sliced
  • 500g Australian ricotta cheese
  • 2 large tomatoes, diced
  • salt and freshly ground black pepper, to taste
  • chopped parsley

  1. Place mushrooms in a dry saucepan. Heat gently until mushrooms are softened and all liquid has evaporated, approximately 5 minutes. Add ricotta cheese and tomatoes. Stir gently over heat until just heated through. Season with salt and pepper and sprinkle with parsley.
