Slimmers' Apricot Cheesecake

  • 500g Australian low fat cottage cheese
  • 1/3 cup caster sugar (or equivalent liquid sweetener)
  • 3 eggs
  • Finely grated rind and juice of one lemon
  • 1/2 cup apricot nectar
  • 200ml Australian light sour cream
  • 1/4 cup chopped dried apricots
  • 1/3 cup carbohydrate modified apricot jam
  • 1 tablespoon arrowroot
  • 2 tablespoons water

  1. Beat cheese and sugar until smooth. Add in eggs one at a time and beat well between each addition. Add lemon rind, lemon juice and apricot nectar. Gently blend in sour cream and apricots. Pour into an 18cm springform pan and bake at 160C for 40 minutes. Turn oven off. Leave cheesecake undisturbed in oven for a futher 30 minutes. Allow to cool. Place jam in a saucepan and heat gently. Blend arrowroot with water to form a paste. Add to jam, stir until thickened. Pour over the top of cheesecake, chill thoroughly.
