Shredded Slaw with Orange Yogurt Dressing

Serves 4


  • 100g red cabbage, thinly shredded
  • 100g snowpeas, thinly sliced
  • 1 large carrot, peeled and grated
  • 1/2 red capsicum, thinly sliced
  • 1/2 cup reduced fat Australian natural yogurt
  • 1/2 cup coriander leaves, chopped
  • 1 teaspoon finely grated orange rind
  • freshly ground black pepper, to taste

  1. Toss the vegetables together in a large bowl. Add remaining ingredients and mix until well coated. Serve.
