Scalloped Potatoes

This winter warming side has a great twist with the addition of sweet potato and then being topped with nutty swiss cheese.

INGREDIENTS

  • 2 large potatoes, peeled and sliced
  • 1 large orange sweet potato, peeled and sliced
  • 2 spring onions, chopped
  • 2 tablespoons cornflour
  • 1 1/3 cups milk
  • 1/4 cup grated Swiss style cheese
  • paprika, for sprinkling

METHOD

  1. Layer potatoes, sweet potatoes and spring onion into a buttered 2-litre capacity (16cm x 26cm) baking dish.
  2. Make a paste using cornflour and a little milk. Add remaining milk and stir until smooth. Pour milk mixture over potatoes and top with grated cheese.
  3. Sprinkle with paprika, cover with foil and bake at 200°C for 20 minutes. Remove foil and bake for a further 40 minutes or until tender and lightly browned. Stand for 15 minutes before cutting.
