Scalloped Potatoes

Serves 2 adults and 2 children


  • 2 large potatoes, peeled and sliced
  • 1 large orange sweet potato, peeled and sliced
  • 2 spring onions, chopped
  • 2 tablespoons cornflour
  • 1 1/3 cups Australian milk
  • 1/4 cup grated Australian Swiss style cheese
  • paprika, for sprinkling

  1. 1. Layer potatoes, sweet potatoes and spring onion into a buttered 2-litre capacity (16cm x 26cm) baking dish.
  2. 2. Make a paste using cornflour and a little milk. Add remaining milk and stir until smooth. Pour milk mixture over potatoes and top with grated cheese.
  3. 3. Sprinkle with paprika, cover with foil and bake at 200°C for 20 minutes. Remove foil and bake for a further 40 minutes or until tender and lightly browned. Stand for 15 minutes before cutting.

Tips / Handy Hints

Make individual serves in small ovenproof dishes. Children will fel super special with their own serving.
