Savoury Scrambled Eggs

Serves 2


  • 3 eggs, beaten
  • 2 teaspoons grated Australian parmesan cheese
  • 2 tablespoons Australian milk
  • 1/4 teaspoon mixed herbs
  • 1 teaspoon Australian butter
  • 1 medium tomato, peeled and roughly chopped
  • salt and freshly ground black pepper to taste
  • 4 slices of wholemeal bread, toasted, for serving
  • orange juice, for serving

  1. Blend together the eggs, cheese, milk and herbs. Melt butter in a small saucepan and gently fry tomato for 1 minute. Add egg mixture and stir over gentle heat until cooked. Season to taste. Divide between 2 slices of lightly buttered wholemeal toast and accompany each serve with a slice of toast topped with desired spread (optional) and a glass of orange juice.
