Savoury Flavoured Butters

Ingredients

  • Combine 125g softened Australian butter with the following ingredient variations for delicious flavoured butters to serve with pasta, meat, seafood or risotto!
  • Anchovy and Caper Butter: 20g each finely chopped anchovy fillets and capers, 1 teaspoon finely chopped fresh dill.
  • Olive and Chilli Garlic Butter: 40g pitted, finely chopped kalamata olives, 2 crushed cloves garlic, 1-2 finely chopped chillies.
  • Thai Chilli Butter: 4 chopped small red chillies, 1 tablespoon each of chopped fresh coriander and finely chopped fresh lemongrass.

Method

  1. Add the various butter flavourings to the salted butter, softened at room temperature; roll into a cylinder using baking paper or foil. Refrigerate or freeze until required.

Tips / Handy Hints

All butters will keep for 1 week covered in the refrigerator, or up to 3 months frozen. Roll the butter into a log between sheets of baking paper and chill until firm. Cut into slices and serve with pan fried meat, seafood, risotto or toss through pasta or steamed vegetables
