Saute Chicken Madras

Serves 4

Ingredients

  • 3 tablespoons Australian butter
  • 1 x 1.2kg roasting chicken, disjointed
  • 500g tomatoes, quartered
  • 250g zucchini, sliced
  • The Savoury Butter -
  • 3 tablespoons Australian butter
  • 2 teaspoons Madras curry powder
  • 1 teaspoon Mexican chilli powder
  • 1 tablespoon flour
  • 1 tablespoon fruit chutney
  • 1/.4 cup sultanas
  • 2 tablespoons finely chopped onion
  • cooked rice, for serving

Method

  1. Melt butter in a heavy based pan. Add legs and saute gently for 10 minutes, turning to brown. Add breasts and wings. Cook further 20 minutes. Add tomatoes and zucchini. Cover and cook for 10 minutes. Spoon over savoury butter. Allow to melt, gradually stirring in to make a smooth sauce. Simmer 2-3 minutes. Serve with buttered rice.
