Salmon Stacks with Wasabi Yogurt

Serves 4


  • 2 teaspoons wasabi paste
  • 1 cup Australian Low Fat Natural Yogurt
  • 2 x 80g wholemeal pita breads
  • 150g Smoked Salmon, sliced
  • 1/4 butter lettuce, washed and finely shredded
  • 1 continental cucumber, peeled, halved, deseeded and thinly sliced
  • 1/4 bunch chives, chopped into 3cm long pieces
  • salt and pepper, to taste

  1. 1. Combine wasabi paste and Australian Low Fat Natural Yogurt. Cut pita bread into quarters. Toast, grill or oven bake the pita quarters until crisp and golden. Combine shredded lettuce, spring onions and cucumber.
  2. 2. Arrange half the pita bread on 4 plates. Top evenly with half the salad, smoked salmon and a tablespoon of wasabi yogurt. Repeat layers, season to taste, and serve atop with a dollop of wasabi yogurt and snipped chives.
