Salmon Soup

Serves 3


  • 1 x 210g can red salmon
  • 2 1/2 cups Australian low fat milk
  • 1 cup mashed sweet potato
  • grated rind of 1 lemon
  • 2 tablespoons chopped parsley
  • crusty bread, for serving

  1. Mash salmon including bones with a fork. Place salmon, milk, potato and lemon rind in a saucepan, bring to the boil. Microwave on High (100%) for 6-7 minutes. Stir through parsley and serve with crusty bread.
