Salmon Rissoles

Serves 2


  • 3/4 cup chopped potato
  • 1/2 cup chopped pumpkin
  • 1 x 105g can salmon, drained
  • 1/4 cup Australian low fat cottage cheese
  • 1 spring onion, chopped
  • 1 tablespoon unprocessed bran
  • squeeze lemon juice
  • chopped parsley

  1. Steam or boil potato and pumpkin until tender. Prepare rissoles as for microwave method. Cook in a non-stick frypan 4-5 minutes each side.

Tips / Handy Hints

Place potato and pumpkin in a covered bowl. Cook on high for 2 minutes. Stand for 2 minutes before mashing. Add remaining ingredients and mix thoroughly. Heat a browning dish on high for 5 minutes. Divide mixture in half, shape each half into a patty. Cook in browning dish for 2 1/2 minutes on high. Stand for 2 minutes before serving with a crisp salad.
