Salami and Mushroom Filo Parcels

Serves 4


  • 25g Australian butter
  • 1 onion, diced
  • 1 cup diced salami
  • 2 cups sliced mushrooms
  • 1 green pepper, cut into strips
  • salt and cracked black pepper, to taste
  • 2 cups grated Australian cheddar cheese
  • 1 teaspoon chopped parsley
  • 60g Australian butter, extra, melted
  • 8 sheets filo pastry

  1. Melt butter and saute onion, salami, mushrooms and green pepper for 2-3 minutes. Season with salt and pepper. Remove from heat and stir in grated cheese and parsley. Using the extra melted butter, brush two sheets of filo pastry and place one on top of the other. Repeat to make 4. Place a quarter of the cheese mixture in the centre of each pastry and wrap the filo to form a parcel, lightly brush with butter. Place on a baking tray and bake at 200C for 20-30 minutes or until golden brown.
