Rocky Road Ice Cream

Serves 6-8


  • 600ml Australian thickened cream
  • 1 x 395g can Australian sweetened condensed milk
  • 1 teaspoon vanilla essence or extract
  • 1 1/2 cups white marshmallows, halved
  • 1 cup dessicated coconut, toasted
  • 1 cup slivered almonds, toasted
  • 1/2 cup glace cherries, chopped
  • 200g dark chocolate, melted (or chocolate sauce, for serving)
  • 1/2 cup Australian thickened cream, extra

  1. 1.  Beat cream, condensed milk and vanilla with an electric mixer until thick, creamy and doubled in volume.
  2. 2.  Fold in marshmallows, coconut, almonds and cherries.
  3. 3.  Pour mix into a lined 24cm round cake pan and freeze until firm.
  4. 4.  Heat chocolate and cream in a bowl over a simmering heat until melted and smooth.
  5. 5.  Remove ice cream from pan at least 15 minutes before serving and invert onto a serving platter.  Serve individual portions drizzled with dark chocolate sauce.

Tips / Handy Hints

Substitute cherries for fruit mince, craisins or dried apricots.
