Rocket, Apple and Parmesan Salad

Ingredients

  • 80g rocket leaves
  • 1 lebanese cucumber, sliced
  • 1 red apple, sliced
  • 1/4 red onion, thinly sliced
  • 2 teaspoons olive oil
  • 1 teaspoon wholgrain mustard
  • 1 teaspoon lemon juice
  • fresly ground black pepper, to taste
  • 60g Australian parmesan, shaved

Method

  1. Assemble rocket, cucumber, apple and onion onto serving dish.
  2. Whick together the oil, mustard, lemon juice and pepper. Drizzle over salad and top with shaved parmesan.
