Roasted Red Peppers and Feta on Bruschetta

  • 4 red bull horn peppers
  • 125g Australian feta cheese, chopped
  • 1/4 cup shredded basil
  • 1 french stick, diagonally sliced into 4 slices
  • 1 cup rocket leaves
  • olive oil, for drizzling
  • balsamic vinegar, for drizzling
  • freshly ground black pepper, to taste

  1. 1. Bake peppers at 200°C for 30-40 minutes. Place in a paper bag to cool before cutting in half, removing skin and seeds.
  2. 2. Fill each pepper with several pieces of feta and top with basil. Toast french stick until golden. Place rocket on toasted bread slices and top with feta filled peppers. Serve drizzled with a little olive oil, balsamic vinegar and black pepper.
  3. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
