Roasted Feta Chillies on Bruschetta

Ingredients

  • 4 long chillies
  • 125g Australian Feta Cheese, chopped
  • 1/4 cup shredded basil
  • 1 french stick, sliced into 4
  • 1 cup rocket
  • olive oil and balsamic vinegar, for drizzling
  • pepper, to taste

Method

  1. Bake chillies at 200°C for 30-40 minutes. Place in a paper bag to cool before removing skin and seeds. Fill each pepper with several pieces of feta and top with basil. Toast french stick until golden. Place rocket on toasts and top with chillies. Serve drizzled with a little olive oil and cracked black pepper.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
