Ricotta Tabbouleh

Serves 6

Ingredients

  • 1/2 cup burghul (cracked wheat)
  • 6 spring onions, finely chopped
  • 2 large tomatoes finely diced
  • 1/2 cup chopped parsley
  • 1/2 cup finely chopped mint
  • (or 1 teaspoon dried)
  • 2 tablespoons lemon juice
  • season to taste
  • 1 cup Australian ricotta cheese

Method

  1. Soak the burghul in 1 1/2 cups water for 1-2 hours. Drain well, pressing out excess moisture. Mix with remaining ingredients and chill until ready to serve. May be stored in an airtight container in the refrigerator 3-4 days. Serve in lettuce cups with pita bread.
