Ricotta Cream Hearts

Serves 6


  • 1 cup Australian ricotta cheese
  • 300ml Australian thickened cream
  • caster sugar, for sprinkling
  • berries, for serving

  1. Beat ricotta cheese until smooth and fold in cream. Line 6 coeur a la creme moulds with squares of scalded muslin. Divide mixture between moulds. Lightly fold overlapping edges of muslin into the centre. Place moulds on a plate in the refrigerator and allow to stand overnight. Turn out and carefully remove muslin. Sprinkle tops with sugar and serve with fresh strawberries or other seasonal berry fruits.
