A delicious sweet treat that you don't have to feel guilty about.

INGREDIENTS

  • 1/4 cup toasted desiccated coconut
  • 1/4 cup oatbran
  • 1 1/2 tablespoons Milo
  • 250g reduced fat ricotta
  • 2 tablespoons icing sugar
  • 1/2 cup chopped dried apricots
  • 1 teaspoon vanilla extract

METHOD

  1. Combine coconut, oatbran and Milo.
  2. Mix half coconut mixture with ricotta, icing sugar, apricots and vanilla until well combined.
  3. Using clean hands, roll tablespoonfuls of ricotta mixture into balls and coat in remaining coconut mixture. Chill for 30 minutes before serving.
