Ingredients

  • 1/3 cup oatbran
  • 2 tablespoons toasted desiccated coconut
  • 1/4 cup Milo
  • 250g wedge Australian reduced fat ricotta cheese
  • 1/2 cup finely chopped dried apricots
  • 1 teaspoon vanilla essence

Method

  1. 1. Combine oatbran, coconut and Milo.
  2. 2. Mix half the oat mixture with ricotta, apricots and vanilla until well combined.
  3. 3. Using clean hands, roll tablespoonfuls of ricotta mixture into balls and coat in remaining coconut mixture. Chill for at least 30 minutes before serving.

Tips / Handy Hints

These balls will keep refrigerated for 3 days. 35c per serve
