Ribbon Finger Sandwich

  • 1 1/2 teaspoons Australian butter
  • 3 slices wholemeal bread
  • 2 tablespoons Australian low fat cottage cheese
  • 1/4 cup grated carrot
  • salt and pepper to taste
  • 1 tablespoon liverwurst spread
  • onion rings (optional)

  1. Lightly butter each slice of bread. Cover one slice with cottage cheese, top with carrot and season if desired. Place second slice on top, butter side down and spread with liverwurst. Top with onion rings and final slice of bread. Serve cut into three fingers and finish the meal with a carton of low fat fruit yogurt.
