Reduced Fat Caesar Salad

Who doesn't love a caesar and this one is lower in fat than other versions, perfect when you are watching what you eat.

INGREDIENTS

  • 1 iceberg lettuce
  • 2 rashers lean bacon, cut into strips and fried
  • 2 eggs, hard boiled and quartered
  • 1 slices white bread, toasted
  • 8 anchovies packed in brine, torn
  • 25g Parmesan, shaved
  • Dressing
  • ¾ cup buttermilk
  • ¼ cup finely grated Parmesan
  • 1 teaspoon crushed garlic
  • 2 teaspoons lemon juice
  • 1 tablespoon finely chopped chives

METHOD

  1. Cut lettuce into 8 thick wedges and place onto a serving platter.
  2. Combine half of the anchovies with buttermilk, grated parmesan, garlic, lemon juice and chives and drizzle over salad.
  3. To make croutons, toast the bread and cut it into 2cm cubes.
  4. Top salad with bacon, egg, croutons and remaining anchovies.
