Raspberry and Yogurt Bircher Muesli

Serves 4


  • 11/2 cups rolled oats
  • 2 tablespoons pepitas (pumpkin seeds)
  • 250ml reduced fat Australian milk
  • 1 apple, grated
  • 1/4 cup freshly squeezed orange juice
  • 1/2 teaspoon finely grated orange rind
  • 200g fresh or frozen raspberries
  • 200g Australian low fat natural yogurt
  • 2 tablespoons pistachios, chopped

  1. 1. Combine oats, pepitas, milk, apple and orange juice in a bowl. Cover and refrigerate overnight.
  2. 2. Stir orange rind through muesli and divide between serving bowls. Top with fresh raspberries, a dollop of yogurt and a sprinkling of pistachios.

Tips / Handy Hints

Use strawberries or other seasonal fruits in place of raspberries if desired.
