Raclette Smothered Potatoes

Serves 4


  • 2 medium pontiac potatoes, unpeeled
  • 1 medium orange sweet potato, peeled
  • salt and pepper, to taste
  • 1 1/2 cups grated Australian raclette or Swiss-style cheese
  • paprika, for sprinkling

  1. Parboil the potatoes and sweet potatoes until just tender. Cut into slices. Arrange alternate slices of potato onto a buttered baking tray. Season to taste. Sprinkle with raclette and paprika. Bake at 180C for 15 minutes until cheese melts and potatoes are heated through.
