- Mix custard and cream together. Dissolve gelatine in a boiling water stirring until dissolved. Gently stir into custard and cream mixture.
- Put into ice-cream trays and freeze until partially set 2.5cm around edges. Place in a chilled bowl and beat until thick and creamy and increased in volume.
- Return to ice-cream trays and freeze until firm. Allow to soften slightly before serving.

Chopped peppermint crisp bar
Chopped chocolate honeycomb bar
chopped canned apricots
glace ginger and honey
