Quick Vanilla Ice Cream

Makes approximately 2 litres


  • 2 x 600ml cartons Australian vanilla custard
  • 2 x 300 ml cartons Australian thickened cream
  • 2 teaspoons gelatine
  • 1 tablespoon boiling water

    1. Mix custard and cream together. Dissolve gelatine in a boiling water stirring until dissolved. Gently stir into custard and cream mixture.
    2. Put into ice-cream trays and freeze until partially set 2.5cm around edges. Place in a chilled bowl and beat until thick and creamy and increased in volume.
    3. Return to ice-cream trays and freeze until firm. Allow to soften slightly before serving.
  1. --**Tip:**-- Vanilla ice cream can be flavoured by adding one of the following:
    • Chopped peppermint crisp bar
    • Chopped chocolate honeycomb bar
    • M&M's
    • chopped canned apricots
    • seasonal berries
    • glace ginger and honey
