Quick and Hearty Ham and Potato Soup

Serves 6


  • 50g Australian butter
  • 1 onion, chopped
  • 4 potatoes, peeled and chopped
  • 1 litre water
  • 3 teaspoons cornflour
  • 2 tablespoons water, extra
  • 2 cups Australian milk
  • 100g sliced ham, chopped
  • 1/4 cup chopped fresh parsley

  1. 1. Melt butter in a saucepan and saute onion for 5 minutes, until onion is soft. Add potatoes and cook for 3 minutes. Add water and simmer, covered, for 15-20 minutes or until potatoes are tender.
  2. 2. Combine cornflour and extra water to form a paste, and add to soup. Simmer until soup boils and thickens. Stir in milk, ham and parsley and reheat without boiling.
  3. 3. Remove from heat and serve immediately.
