Queen Pudding (B)

Ingredients

  • 2 egg yolks
  • 2 tablespoons caster sugar
  • 2 cups Australian milk
  • 1 cup soft breadcrumbs
  • 1/2 teaspoon vanilla essence
  • 1/4 cup raspberry jam
  • MERINGUE
  • 2 egg whites
  • 2 tablespoons caster sugar

Method

  1. Beat egg yolks and castor sugar together. Add milk, breadcrumbs and vanilla. Pour into a buttered baking dish. Bake at 150C for 1 - 1 1/4 hours or until firm. Remove from oven. Cover with jam. Beat egg whites until stiff, gradually add sugar and beat well. Pile meringue on pudding. Bake at 200oC for 10 minutes or until lightly browned.
