Pumpkin Potage

Serves 6-8


  • 1.5 kg pumpkin, peeled and chopped
  • 3 onions, chopped
  • 4 cups chicken stock
  • 2 bay leaves
  • 1/2 cup Australian skim milk powder
  • freshly ground black pepper, to taste

  1. Place pumpkin, onions, stock and bay leaves in a large saucepan. Bring to the boil, cover and simmer until pumpkin is tender. Remove bay leaves, mix in milk powder and puree until smooth. Return to pan and gently reheat without boiling. Season to taste.
