Pumpkin Cheddar Chowder

Serves 6


  • 2 rashers bacon, chopped
  • 1 onion, sliced
  • 500g pumpkin, peeled and chopped
  • 2 cups chicken stock
  • 1 cup grated Australian cheddar cheese
  • 1 cup Australian milk
  • salt and pepper, to taste
  • grated Australian cheddar cheese, extra

  1. Saute bacon and onion for 2 minutes. Add pumpkin and stock and simmer covered for 15 minutes or until tender. Puree in a food processor until smooth. Return to a clean saucepan. Add cheese and milk and season to taste. Reheat without boiling. Serve sprinkled with extra cheese.
