Prune "N" Apricot Ring

Ingredients

  • 1 quantity orange ring cake mixture (see recipe)
  • 1/2 cup brown sugar
  • 2 tablespoons Australian butter, melted
  • 1/2 cup stoned prunes
  • 1 x 425g can apricot halves, drained

Method

  1. Sprinkle the brown sugar into the base of a well-buttered 20cm ring pan. Drizle the melted butter evenly over the sugar. Halve the prunes. Place a prune half in the hollow of each apricot. Arrange them prune side down on base of pan. Pour in the orange cake mixture. Bake at 190C for 40-45 minutes. Loosen edges. Allow to stand 2-3 minutes before turning out onto serving plate. Accompany with cornflour custard or whipped cream.
