Prune Mousse

Serves 5


  • 15g pitted prunes
  • 400g Australian berry flavoured yogurt
  • 1 tablespoon gelatine
  • 1/4 cup hot water
  • 2 egg whites

  1. Puree prunes until smooth. Add yogurt and blend well. Dissolve gelatine in hot water. Cool slightly, add to yogurt mixture. Whip egg whites until soft peaks form. Fold through yogurt mixture. Spoon into individual glasses and refrigerate untile set. Decorate with a couple of fresh berries or an apricot half.
