Prune Health Loaf


  • 60g Australian butter
  • 3/4 cup brown sugar
  • 200g Australian curd-style cottage cheese
  • grated rind of 1 lemon
  • 2 eggs
  • 1/2 cup stoned prunes, halved
  • 1 tablespoon lemon juice
  • 2 cups wholemeal self raising flour
  • 2 tablespoons wheatgerm
  • 1 teaspoon allspice

  1. Cream butter and brown sugar together until light and fluffy. Blend in the cottage cheese and lemon rind. Gradually beat in the eggs. Fold in remaining ingredients. Spoon into a buttered and lined 20x15cm loaf tin. Bake at 180C for 1 hour. Turn out and allow to cool before slicing.
