Prosciutto, Bocconcini and Sundried Tomato Bites

  • 12 Australian bocconcini
  • 12 marinated sundried tomatoes, drained
  • 12 basil leaves
  • 6 slices prosciutto, halved lengthways

  1. 1. Lay half a slice of prosciutto on a work surface and top at one end with a sundried tomato, basil leaf and a bocconcini. Roll up to enclose the bocconcini, tomato and basil in prosciutto.
  2. 2. Place each parcel with one open side face upwards onto a baking paper lined oven tray. Bake for 5-10 minutes at 200C until bocconcini begins to melt and prosciutto begins to cook and crisp.
  3. 3. Serve immediately with toothpicks, cocktail forks or on a bed of baby spinach.
