Prosciutto and Bocconcini Skewers

These cute little appetisers will be very popular at your next barbecue.

INGREDIENTS

  • 10 slices prosciutto, cut into strips lengthways
  • 200g tub (approximately 20) bocconcini cheese
  • 20 x 15cm bamboo skewers
  • 20 basil leaves
  • 20 cherry tomatoes
  • 20 pitted kalamata olives
  • balsamic vinegar, for drizzling
  • extra virgin olive oil, for drizzling

METHOD

  1. Wrap prosciutto strips around each bocconcini. Thread one prosciutto wrapped bocconcini onto a skewer, followed by a basil leaf, a tomato and an olive. Repeat with remaining skewers and ingredients.
  2. Serve drizzled with balsamic vinegar and extra virgin olive oil as part of an antipasto platter.
