Prawn Pate

Serves 4-6

Ingredients

  • 1/4 onion, chopped
  • 2 x 200g cans cocktail prawns, drained
  • 125g Australian butter, softened
  • 1 tablespoon lemon juice
  • 1 tablespoon mayonnaise
  • 1 teaspoon tomato paste
  • tabasco sauce, to taste
  • 1 tablespoon chopped parsley

Method

  1. Puree onions and prawns in a blender. Add remaining ingredients and blend until smooth. Spoon into a pate pot and refrigerate. Serve with melba toast or crackers.
