Potato Power Booster

Serves 4


  • 4 large pontiac potatoes, washed
  • 1/2 cup Australian natural yogurt
  • 125g can tuna, drained
  • 1 spring onion, sliced
  • 1 1/2 teaspoons lemon juice
  • Rind of 1 lemon
  • black pepper to taste
  • 1/2 cup grated Australian matured cheddar cheese

  1. Prick potatoes all around with a fork and place in the microwave oven for 10 minutes on High (100%). Rotate potatoes twice during cooking. Alternatively place potatoes in a hot oven (200C) and bake for 30-40 minutes. Combine all dressing ingredients except cheese and mix well. Slit potatoes open and top with dressing. Sprinkle cheese over the top and return to oven for 5 minutes or microwave on High (100%) for 1 minute.
