Potato, Bacon and Corn Chowder

Serves 4


  • 10g Australian butter
  • 1 onion, chopped
  • 2 rashers bacon, chopped
  • 300g orange sweet potato, peeled and chopped
  • 300g potato, peeled and chopped
  • 1 tablespoon plain flour
  • 2 cups (500mL) chicken stock
  • 1 cup Australian milk
  • 310g can creamed corn
  • 1 cup grated Australian Swiss style cheese, for serving
  • fresh parsley, for serving

  1. 1. Melt butter in a saucepan.  Add onion and cook, stirring until softened.
  2. 2. Add bacon and potatoes and cook, stirring for 3 minutes. Add flour and cook for a further minute. Add stock and simmer, covered for 15 minutes or until the potatoes are tender.
  3. 3. Add milk, creamed corn and season to taste.
  4. 4. Reheat without boiling. Serve soup with grated Swiss style cheese and garnish with parsley.
