Potato and Leek Instant Soup

  • 1 medium potato, peeled and diced
  • 1/2 leek, finely sliced
  • 1/2 teaspoon Australian butter
  • shake of pepper and nutmeg
  • 1 teaspoon beef stock
  • 2 teaspoons parsley
  • 250ml Australian milk

  1. Put potato, leek and butter into a microwave bowl, cover and cook on High for 5 minutes, stirring once. Add remaining ingredients and puree in a vitamiser or food processor until smooth. Pour back into microwave bowl and heat until soup begins to bubble. Serve immediately.
