Pork Twirls

Serves 2


  • 1 x (200g) pork fillet
  • 1 apple, peeled and cored
  • 1/2 cup fresh wholemeal breadcrumbs
  • = 1 slice no crusts
  • 1/4 cup grated onion
  • 1/3 cup Australian low fat natural yogurt
  • pinch ground cloves

  1. Cut pork fillet down the centre, but not all the way through. Open out flat and pound meat lightly with a meat mallet to flatten. Grate apple into a bowl. Squeeze as much liquid from the apple as possible and reserve. Mix breadcrumbs, grated apple, onion and 1 tablespoon of apple juice together. Press stuffing evenly over pork fillet to reach all edges. Season to taste. Roll up as for a Swiss roll starting with a long edge. Cut into 4. Grill on both sides for approx. 8 minutes or until cooked. Mix remaining apple juice with yogurt and cloves. Serve pork twirls with yogurt sauce poured over. Serve with fresh vegetables.
