Pork Marsala

Serves 4

Ingredients

  • 4 pork loin chops, excess fat removed
  • 60g Australian ghee
  • 1/4 bunch spring onions, cut into 1 cm lengths
  • 6 medium carrots peeled, cut into 1cm rings
  • 1/2 cup Marsala
  • 1/2 cup water
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • 1/4 teaspoon freshly ground black pepper
  • 1 beef cube, crumbled
  • 1/2 cup grated Australian Parmesan cheese
  • 1 tablespoon coarsley chopped parsley

Method

  1. Saute pork chops in the ghee until golden brown in a large heavy based frying pan. Add all ingredients except parmesan cheese and parsley. Cover and simmer gently for 40 minutes. Spoon into an ovenproof dish if desired. Sprinkle over grated Parmesan cheese and grill until golden brown. Garnish with parsley. Serve immediately.

Tips / Handy Hints

Saute pork chops in the ghee until golden brown in a large heavy based frying pan. Add all ingredients except parmesan cheese and parsley. Transfer mixture to shallow ovenproof dish, cover, microwave on high for 10 minutes. Sprinkle over cheese and parsley and grill until golden brown.
