Pork and Orange Saute

Serves 4

Ingredients

  • 50g Australian ghee
  • 1 onion, chopped
  • 2 teaspoons curry powder
  • 500g lean pork, cut into thin strips
  • 1 1/2 cups fresh orange juice
  • 1 cup thinly sliced celery
  • 1 tablespoon water
  • 1 tablespoon cornflour
  • 4 cups cooked white rice, for serving
  • 1/4 cup toasted slivered almonds

Method

  1. Melt ghee and saute the onion. Add curry powder and cook for 1 minute. Add the pork, cooking until browned. Add orange juice and celery and bring to the boil. Cover and simmer for 25 minutes. Blend water with cornflour to form a smooth paste and add to the pan, stirring until thickened. Serve pork and orange saute over rice and sprinkle with almonds.
