Plummed Pork Pockets

Serves 4


  • 100g Australian ricotta cheese
  • 1/4 cup savoury plum sauce
  • 4 butterfly pork steaks, trimmed of fat
  • 20g Australian butter
  • 1/2 cup water
  • 1 teaspoon cornflour

  1. Blend ricotta with half the plum sauce. Make a slit in the pork to form a pocket. Fill with plum and ricotta mixture and secure with a toothpick. Cook pork in butter until cooked through. Remove pork to serving plates. Blend water with cornflour and add to pan. Stir until sauce thickens slightly. Stir in remaining plum sauce and pour over pork.
