Plum Pudding

Ingredients

  • 400g mixed dried fruit
  • 1/2 cup brandy
  • 2 apples, peeled, cored and grated
  • 150g Australian butter, melted
  • 1 cup brown sugar
  • 50g slivered almonds
  • 2 eggs
  • 1/2 cup plain flour
  • 1/2 cup cake crumbs
  • 1 tablespoon mixed spice
  • custard, for serving

Method

  1. Soak the fruit in the brandy overnight. Add the apple, butter, sugar, almonds, and eggs. Stir through dry ingredients until just combined. Spoon into 6 buttered 1/2 cup capacity microwave dishes. Cook covered on a rack on High (100%) for 3-4 minutes. Allow to stand, covered, an extra minute before serving with custard and Australian custard.
