Plum Pancakes Almondine

Serves 6


  • 1 cup plain flour
  • 1 cup Australian milk
  • 300ml Australian sour cream
  • 1 egg, lightly beaten
  • 1/2 cup plum conserve
  • 1/2 cup slivered almonds

  1. Sift flour into a large bowl and whisk in milk, 1/2 cup of sour cream and egg. Pour 1/4 cup of mixture into base of a hot and lightly buttered frypan. Cook on both sides until golden. Repeat with remaining batter to make approximately 12 pancakes. For the sauce, blend together remaining sour cream and conserve. Stack 2 pancakes and pour over sauce. Sprinkle with toasted slivered almonds.
