Plum and Apricot Clafoutis

Serves 6


  • 4 plums, stones removed and quarted
  • 4 apricots, stones removed and halved
  • 4 eggs
  • 2/3 cup sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon rum, kirsch or fruit liqueur
  • 1 cup plain flour
  • 1 1/2 cups Australian thickened cream
  • extra Australian whipped cream, for serving

  1. Arrange fruit in the base of 6 individual 1 cup capacity ovenproof dishes or one 6 cup capacity ovenproof dish. Beat the eggs and sugar together until thick and creamy and add vanilla and rum. Fold in flour, then cream. Pour mixture over fruit and bake at 180C for 25-30 minutes for individual, or 40-45 minutes for large, until golden brown. Stand for 2 minutes prior to serving. Serve with whipped cream.

Tips / Handy Hints

Microwave on a rack, covered, for 12-14 minutes on Medium power (50%).
