Ingredients

  • SCONE DOUGH
  • 2 cups self raising flour
  • 30g Australian butter, cubed
  • 3/4 cup Australian milk
  • FILLING
  • 2 tablespoons tomato paste
  • 1/2 onion, sliced
  • 6 slices salami or ham, cut into strips
  • 1/2 red pepper, chopped
  • 1 1/2 cups grated Australian mozzarella cheese
  • 1 teaspoon oregano or mixed herbs

Method

  1. 1/ Collect ingredients.
  2. 2/ Make the scone dough first. Place flour in a bowl and rub in butter with fingers, until the mixture resembles coarse breadcrumbs.
  3. 3/ Make a well in the centre, add the milk and mix to make a dough.
  4. 4/ Knead the dough lightly until smooth and roll out into a large rectangle, using a rolling pin.
  5. 5/ To make the filling, spread the dough with tomato paste and sprinkle with onion, salami, red pepper, cheese and oregano.
  6. 6/ Roll up the dough like a Swiss roll and place on an oven tray.
  7. 7/ Bake at 220C for 20 minutes until golden brown.
  8. 8/ Serve sliced, hot or cold.
