Piquant Prawn Salad

Serves 2


  • 125g Australian blue vein cheese
  • 1 tablespoon port
  • 1/4 cup Australian sour cream
  • 2 cups cooked shell noodles
  • 100g snow peas, blanched
  • 2 large yellow or red capsicums, cut into match-stick sized pieces
  • 50g pecan nuts, lightly toasted
  • 12 prawns, cooked and shelled

  1. Blend cheese with port and cream to form a smooth dressing. Toss noodles, snow peas, capsicum and pecan nuts in dressing. Place salad on serving plates and arrange prawns on top.
