Pineapple Creamed Rice

Serves 4


  • 1 x 440g crushed pineapple, drained and juice reserved
  • 1/2 cup shortgrain rice
  • 200g Australian continental-style cottage cheese
  • 1/4 cup toasted coconut

  1. Add enough water to pineapple juice to make up 2 1/2 cups liquid. Place in a small saucepan and bring to the boil. Add rice and cook covered, for 15 minutes, until all the liquid has been absorbed into the rice. Stir through cottage cheese, coconut and pineapple. Serve hot or cold.
