Pineapple Cheese Ring

Serves 8


  • 3 tablespoons gelatine
  • 1 x 825g can unsweetened pineapple pieces, 1/2 cup juice reserved
  • 1 cup orange juice
  • 1/4 cup lemon juice
  • 1 teaspoon finely grated lemon rind
  • yellow food colouring (optional)
  • liquid sweetener to equal 1/2 cup of sugar
  • 2 eggs,separated
  • 1 cup Australian low fat creamed cottage cheese
  • 1/2 cup Australian light sour cream
  • 1 punnet strawberries, washed and hulled
  • 4 kiwi fruit, peeled and sliced

  1. Sprinkle gelatine over the reserved pineapple juice, dissolve over hot water. Add the orange juice, lemon juice, rind, food colouring and liquid sweetener. Pour over the lightly beaten egg yolks and combine. Chill until mixture is on the point of setting. Press cheese through a sieve, blend in the sour cream. Mix into the gelatine mixture. Beat the egg whites until stiff and fold into mixture. Fold in pineapple, or as an alternative, serve as an accompaniment. Pour into a 6 cup mould and chill until set. Unmould and serve with strawberries and kiwi fruit.
