  • 1 cup gluten free bread mix
  • 1 tablespoon sugar
  • 1/2 cup Australian milk
  • 1 egg, beaten

  1. Sift bread mix into a bowl. Stir in sugar. Make a well in the centre. Pour in milk, add egg. Gradually stir into dry ingredients to make a smooth batter. Stand 15 minutes. Drop spoonfuls on a hot, buttered griddle or heavy-based frying pan. When bubbles appear on surface turn and brown other side. Continue until batter is used.
