Plum and Almond Love Heart Pikelets with Honey Cinnamon Yoghurt

These adorable pancakes will be loved by your Valentine or mum on Mother's Day.

INGREDIENTS

  • 1 cup self-raising flour
  • 2 tablespoons caster sugar
  • ½ teaspoon baking powder
  • 250ml milk
  • 1 egg
  • 1 cup Greek style yoghurt
  • 1 tablespoon honey
  • ¼ teaspoon cinnamon
  • butter, for cooking
  • 1 x 425g can plum halves, drained and halved
  • toasted slivered almonds, for serving

METHOD

  1. Place flour, sugar and baking powder in a bowl. Combine milk and egg, slowly whisk into flour mixture until smooth. Set aside for 10 minutes.
  2. Combine yoghurt with honey and cinnamon, set aside.
  3. Melt butter in a non-stick frypan over medium heat. Using a spoon draw love heart shapes with the mixture in the pan. Cook for 2 minutes each side or until the pikelets are fluffy and golden.
  4. To serve, top a stack of pikelets with plums, honey cinnamon yoghurt and sprinkle with almonds.

HANDY TIPS

• Substitute cinnamon with ½ teaspoon vanilla if desired • Substitute plums with canned apricots or fresh seasonal fruits if desire
